Cognac, of which over 92% is for export, is one the biggest selling French products in the world. It accounts for €1.26 billion of France's trade surplus. It is the reference product of the food processing industry in the Charente department, with some internationally renowned trading firms, such as Hennessy, Rémy Martin, Martell, Courvoisier, and Camus.
Food processing represents 34% of Charentais industrial concerns (including the craft industry), and can be divided into three main areas of business :
• Bread and cake production for half of the food-processing firms ;
• Standing at 30%, the production of natural brandies is second in terms of the number of companies and first for the number of employees, with nearly 60% of the workforce ;
•The meat industry, with 13% of the companies, includes the production of meat for butchery, poultry, industrial preparations and cooked meats.
This sector includes 60 companies of over 20 employees, and has a total workforce of 3,230 employees..
